VTを有効にすると、コンソールとして VGAがデフォルトで選択されてしまうの
が原因のようです。

     Graphics support -> Console display driver support

に移動し、以下のように変更してみてください。

    [ ] VGA text console
    <*> Framebuffer Console support
    [ ] Select compiled-in fonts
